The blackboard allow us to be flexible and follow the availabilities of the market,
to always work with fresh and seasonal ingredients, and follow instinct and creativity.
The dishes, as well as our tasting menus are always changing,
depending on the freshness of the ingredients we find.
At Essenziale there is only one rule: let it go.
